Gluten Free Pancakes


Happiness is a Pancake Breakfast... or dinner for that matter...


Ingredients

1 C. Arrowhead Mills Gluten Free Pancake & Biscuit Mix (or really any GF flour mix)
1 Egg, beaten, or Egg Substitute 
(For baking I always use 1/4 C. Applesauce + 1 tsp. Baking Powder for every egg as a sub)
1 Tbsp. Vegetable Oil
1 Tbsp. Honey
1/2 C. Milk of Choice (I use Cashew or Coconut)
Toppings or fillings of choice (chocolate chips, blueberries, maple syrup etc.)

Preheat a non-stick pan on medium heat. Combine all ingredients into a bowl being careful to mix until just combined, do not over mix. Let sit for 5-10 mins to create a thicker consistency. If you want the batter thicker, add less milk, if you want it thinner, add more milk. 

I use pour 1/4 cupfuls of batter onto the pan, add fruit or choco chips, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side. Serve with toppings! 

*makes about 6 pancakes
